2 ounces gin

1 ounce Pineapple Syrup (page 151)

1 ounce Orgeat (page 151)

¼ ounce lemon juice

2 dashes of angostura bitters

Combine all the ingredients in a shaker and fill with ice cubes. Shake vigorously for 20 to 30 seconds, until very cold. Strain the contents of the shaker into a chilled martini glass and serve.
